Instructions
Step 1
Place onions and parsnips on the bottom of a deep, large pot.
Step 2
Place the roast on top of the vegetables. Season with 2 teaspoons of salt on each side.
Step 3
Cover the pot, and simmer the meat for 3 to 4 hours. Turn the roast intermittently.
Step 4
Once done cooking, remove the roast and refrigerate until cold. Slice while cold.
Step 5
Using an immersion blender, blend the vegetables and serve as a sauce over the sliced roast.
