Step 1
Into a heat proof bowl, add red chili flakes, ground sichuan peppercorns, salt, sugar, and MSG. I used a stainless steel bowl.
Step 2
Give your garlic and shallots a really fine dice then add them in as well. Stir well.
Step 3
In a saucepan, heat up oil until it reaches 190c.
Step 4
Pour the hot oil over your chili flakes.
Step 5
Top with soy sauce and sesame seeds. Store in fridge up to 6 months.
