Instructions
Step 1
1. Make your brown butter by melting 3/4 cups of butter. To make brown butter melt it in a pot, and occasionally stir until you see brown specks.
Step 2
2. Let the brown butter to cool down in a fridge until the color is opaque. This will make it easier for you to whisk together. While this is happening, go ahead and add in your dry ingredients in a separate bowl.
Step 3
3. Add in your sugars, vanilla, coffee grounds, cinnamon and brown butter in a bowl. Whisk them together until light and fluffy.
Step 4
4. Then add in your egg yolk and your egg until it's well combined.
Step 5
5. Add in your dry ingredients 1/4 at a time to avoid making the cookies stiff. Add it in until it's just incorporated.
Step 6
6. Add in your chocolate chips and your chocolate chunks together until it's evenly distributed.
Step 7
7. Put it in the fridge for an hour or overnight. Overnight is better since it will develop a richer flavor.
Step 8
8. Preheat your oven to 350 degrees*
Step 9
9. Use a tbsp spoon to roll it into a ball. Don't use an ice cream scoop since these cookies spread out. When you put it on the baking tray, make sure you flatten it the ball a little bit.
Step 10
10. Bake the cookies for around 9-12 minutes or until golden brown. For those who have convention ovens, lower your oven temperature to 325 degrees and bake for around 7 minutes.
