Spanish rice
90-second, or substitute cilantro rice or quinoa
1can black beans
drained
1 canRotel d tomatoes
mild, or sub dice
onion
Diced, or onion powder
garlic powder
cumin
chili powder
paprika
salt
pepper
Frozen precooked chicken
omit if unavailable
olive oil
cilantro
fresh, optional
sour cream
optional
shredded cheese
optional
Instructions
Step 1
Heat a couple tablespoons olive oil. Sear frozen chicken.
Step 2
Add rice
Step 3
Add beans and tomatoes and seasonings
Step 4
Once everything is warmed through, plate how you like. On tortilla, over chips, by itself in a bowl, etc
Step 5
Optional top with guac, sour cream, shredded cheese, cilantro, etc
