Instructions

Eggplant

Step 1
Dice the eggplant.
Step 2
Heat the oil in the pan. Leave the heat on medium high. Add the eggplant and fry for about 3-4min. Season with salt, pepper and oregano.

Wrap

Step 3
Roast the pine seeds in a pan until slightly brown.
Step 4
Spread the front center of the wrap with the basil mayonnaise.
Step 5
Top it with the arugula, tomatoes, eggplant and pine seeds.
Step 6
Grated the Parmesan cheese on top.
Step 7
Fold the sides of the wrap inward first. Then place the front part of the wrap over the filling and roll up under tension exercise.
Step 8
Roast the wrap on all sides. Enjoy!
