Instructions
Step 1
Prepare peeled shrimp. There is a sharp point in the middle of the tail, remove this as it contains a water pocket that can cause the oil to splatter when deep frying.
Step 2
Make slight diagonal cuts on the front and back of each shrimp. This prevents the shrimp from curling up during deep frying and helps them appear longer.
Step 3
Coat the prepared shrimp with flour.
Step 4
Pour 1 cup of twigim garu. (frying mix). Add 1 cup of cold or ice water.
Step 5
Frying: Dip the shrimp into the batter mix and then deep fry in the oil. Heat the oil to 360°F (180°C). Deep fry for about 3-4 minutes until golden brown. Remove the shrimp and let them cool slightly.
Step 6
For extra crispiness and flavor, re-fry them for about 20 seconds. Enjoy your crispy and savory shrimp tempura! Crispy and savory saeu(saewoo) twigim is done!
