Velveeta Mac and Cheese

Instructions

Step 1
Preheat oven to 350*F. Lightly spray 3 quart baking pan with nonstick spray. Set aside In a large pot, bring generously salted water to boil. Cook macaroni according to package directions until al dente. Drain well and set aside. In large saucepan melt butter over medium heat. Once butter is melted, whisk in flour. Continue to whisk and cook for 1-2 minutes until smooth and lightly golden. Slowly whisk in 1 cup of milk to the butter & flour mixture. Continue cooking, whisking frequently, until mixture thickens, about 3-4 minutes. Add cubed Velveeta and stir until melted. Add shredded Gouda cheese to the saucepan. Stir until cheeses are fully melted and sauce is smooth. Season with salt and pepper to taste. Add cooked macaroni to the cheese sauce, stirring to ensure macaroni is well coated with sauce. Transfer the creamy mac and cheese to prepared baking dish. In a small bowl combine 1/2 cup with 2 T melted butter. Mix until bread crumbs are evenly coated. Sprinkle topping over the Mac & cheese. Place dish in preheated oven and bake for 20-25 minutes until topping is golden brown and dish is bubbling. Once out of the oven, garnish with fresh parsley. Serve hot.
Step 2
To cook in a crockpot, assemble casserole as above but do not add the topping. Lightly spray insert before adding mixture. Cook on low for 2-3 hours. Check after 90 minutes to make sure macaroni isn’t getting mushy. Stir well and serve. If mixture is too thick, stir in a little milk. For crispy topping, combine topping ingredients in a small bowl and spread on a baking sheet. Bake for a few minutes until crispy. Sprinkle over top of mac before serving.
