Smashed Beef burgers with Onion jam and crispy onions topping

This recipe is inspired from BigEats recipe on youtube but modified and improved to my own preferences. This beef smashed burger is toped with 24 months cheddar and american cheese and topped with an onion jam and fired onion rings but without the bacon bits that was in the orin

Instructions

Home made mayo

Step 1
Combine all ingredients in a blender until full combined. Reserve in fridge for at least 1-2 hours to allow it to thicken

Sauce

Step 2
Chop the, to small bits and combine all sauce ingredients together along with the homemade mayo

Onion Jam

Step 3
Chop, very finely and fry for 5-7 min until translucent.
Step 4
Add the rum, beef broth (or chicken if you don't have beef), brown sugar, apple vinegar and cook for another 20-30 min until all liquid evaporated and onions turned into a deep dark brown. It should be thick and soft.

Onion Ring

Step 5
Mix egg, oil, and milk on low speed of mixer for 1 minute.
Step 6
Add dry ingredients and mix until smooth.
Step 7
Coat onions in flour.
Step 8
Dip in batter.
Step 9
Fry in hot oil 190C until desired shade of brown.

Fry your patties

Step 10
Create two 80gr beef patties and roughly shape them in a circle. Make it slightly smaller than your buns. When you smash them, they will become wider. Sprinkle sea or celtic salt and pepper on each sides of your patties and cook on a very hot grill. It should sizzle instantly. use your spatula to smash your patties to a thin layer

Fry a couple of minutes. Water should start to come to the surface of your patty when cooked underneath. This is your signal to flip your patty.
Step 12
Add your old aged cheddar cheese on one patty and american cheese on the other. Cook for another minute and reserve.

Assembling your burger

Step 13
Cut your buns in half and while cooking your patties, fry each side to a golden brown.
Step 14
Add your sauce on the bottom half of your bun. Add your smashed beef patties on top. Cover with your onion jam and finally add your crispy onions. Add the top half of your bun and enjoy.
