Instructions
Step 1
Prepare and open broad beans from the bean pod, clean with water.
Step 2
To blanch broad beans, in a small saucepan, add in water, cooking oil and salt, bring to boil. Throw in fresh broad beans in boiling water to cook for roughly 8 minutes until soft and cooked.
Step 3
In a skillet, heat up cooking oil, then add in scallion pieces to infuse aroma in the oil. Discard charred scallion and then put in blanched broad beans in infused oil to stir fry on medium heat.
Step 4
Cook for several minutes until the broad beans are nicely charred and brown as well as complexly creamy and soft. Season with salt and chicken powder, garnish with chopped scallion, remove from heat and serve warm.
