Step 1
Slice garlic and ginger into thin slices, break dried chili pepper into small pieces.
Step 2
Slice spiced bean curd into small thin slices (roughly 1/8 inch thick), transfer to a plate.
Step 3
Slice celery into similar small thin pieces, blanch in boiling water for a minute, transfer to a plate.
Step 4
Heat up lard or cooking oil in a pan on medium heat, add in sliced garlic, ginger and chili to stir until aromatic. Throw in sliced spiced bean curb to mix and cook for a couple of minutes until soft. Further add in blanched celery to mix, season with sugar, light soy sauce and chicken powder to taste, toss and plate. Serve warmly.
