Ostakaka is a Swedish Cheese Cake that my family bakes for special occasions. When serving ostakaka, we pour sugar milk on top, warm it up in the microwave, and serve with Lingonberries.

Ingredients

4 qtsraw milk
fresh

1 ½ cupsmilk
additional

¾ cupflour
0.5Hanson cheese tablet
rennet

½ cupwater
cold

3eggs
beaten

¾ cupsugar

½ teaspoonsalt

1 ½ cupcream

½ teaspoonAlmond flavoring

½ teaspoonvanilla

Instructions
Step 1
Heat milk to lukewarm (between 95 to 105 degrees).

Step 2
Add flour to additional milk, blend until smooth. Set aside.


Step 3
Soak rennet tablet in cold water. Set aside.

Add flour mixture and rennet tablet to lukewarm milk. You want to stir with a dinner knife by drawing straight lines, easily going in one direction, and then the other direction. Let this mixture sit for 40 minutes or until the whey is separated from the curds.

Drain the whey from the curds using double layer cheesecloth. I hang mine over the sink faucet.
Step 6
Once the whey is drained, put curds in a buttered baking dish. Combine together the eggs, sugar, salt, cream, almond flavoring, and vanilla. Add to curds. Mix together by folding.






Step 7
Bake at 400F for 30 minutes. Reduce heat to 350F for 45 minutes or untill is done. Test by inserting a knife in the middle.
Serving
Step 8
Ostakaka tastes good, warm, or cold. If you want to serve it warm mix the milk and sugar together and pour it over the Ostakaka, pop it in a hot oven or microwave just to warm it, and serve.
