Ingredients

1 lbdried pinto beans
or black
8 cupsbroth
cooking oil
1onion
large, finely diced
0.5 lbmixed peppers
finely diced
1can Chipotles in Adobo Sauce
finely diced, or chipotle powder
1 Tbspcumin
1 Tbsporegano
1 Tbspcoriander seed
1 Tbsponion powder
1 Tbspgarlic powder
1 tspchili powder
1 Tbsp if you want it spicy
salt
to taste
Instructions
Step 1
Rinse and sort out any stones from the beans
Step 2
Place the beans and broth in the instant pot. Cook on high pressure for 40 minutes then allow it to natural release or 60 mins with a quick release
Step 3
Making sure to reserve the liquid, Drain off most of the remaining cooking liquid from the beans.
Step 4
Meanwhile prehead a dutch oven and, Sauté the onion and peppers over high heat until cooked through and soft.
Step 5
Add the spices to the pan. Cook until fragrant.
Step 6
Add the beans to the veggie and spice mixture
Step 7
Simmer and Mash the beans. Add a small amount of the reserved cooking liquid slowly until you reach the desired consistency. Season to Taste.
