Instructions
Step 1
Heat oil in a large skillet over medium heat
Step 2
Add garlic and onions, cook 3 to 4 minutes
Step 3
Reduce heat to low, add rice and salt
Step 4
Cook over low heat 3 mins, stir to make sure the rice doesn't burn
Step 5
Add 2 cups broth + juice + zest 2 limes, bring to a boil
Step 6
Reduce heat to low, cover, simmer 10 to 15 minutes until the rice is done
Step 7
Add more liquid as needed. The rice shouldn't be sticky
Step 8
Before serving, stir through the juice of 1 lime and chopped cilantro
