Step 1
Cut up the chicken into bite-sized pieces

Add the 2 tablespoons of butter to a skillet over medium-high heat

Season the chicken with salt, cayenne, chili powder, cumin, paprika, dried oregano, and black pepper

Cook the chicken until it reaches an internal temperature of 165 degrees

Add the Rotel (drain partially) and the Velveeta to the skillet. Stir and let sit until the cheese metls
Step 6
Add a bit of oil to another skillet and heat up the tortilla
Step 7
Add a scoop of cheesy chicken to a tortilla. Fold the tortilla in half and cook until both sides are golden brown
Step 8
Top with sour cream or pico!
