Step 1
BOIL IT

Chop potatoes 2cm.

Place in a pot and cover with hot tap water and a pinch of salt. Bring to a boil with the lid on.

Remove lid and drop heat to medium.

Cook for about 15 mins, until tender.

PREP IT

Preheat oven to 220°C (or 200°C fan bake). Finely chop onion.

Roughly chop garlic.

Grate carrots.

Roughly chop broccoli or cauliflower.

MIX IT

Crack eggs into a bowl and whisk to combine.

Add all vegetables and season with salt and pepper.

BAKE IT

Pour into a large, greased baking dish and sprinkle over cheese. Bake in the oven for about 40 mins, until cooked through and golden brown.

Cut into slices and serve on its own or with whatever salad ingredients you have in the fridge.
