Mediterranean Turkey Skillet Dinner

Ingredients
4 servings
1 tablespoonolive oil
1 lbground turkey
1onion
small, chopped
2 tspminced garlic
1 tspsalt
½ tspground black pepper
½ tspdried oregano
½ cupsun dried tomatos
drained, roughly chopped
1 cuprice
2 cupschicken broth
5 ozspinach
1lemon
zested, and juiced
½ cupfeta cheese
Instructions
Step 1
Heat oil in a large skillet over medium heat.
Step 2
Set turkey into skillet and break it up into small pieces. Then cook ground turkey with onion, seasonings, and garlic until meat is browned and onion is translucent.
Step 3
Add sundried tomatoes, rice, and chicken broth. Bring to a boil.
Step 4
Reduce heat to a simmer, cover the skillet and cook for 15 minutes until rice is tender.
Step 5
Uncover and stir in spinach, lemon juice, and zest. Cook until spinach is wilted.
Step 6
Serve topped with feta.
