Instructions
Step 1
Roll each breast through the spice mix until covered all around
Step 2
Put in baking tin and either grill or bake at 180ºC until cooked through (check especially when grilling) ± 25-30 minutes.
Step 3
You can freeze in the bits you don't eat for another meal.
Step 4
If you make your own oven chips, cut a large cleaned potato (in or without skin) into wedges, parboil for 5-7 minutes, whilst you put an empty baking tray, coated generously with cooking oil to preheat in the oven.
Step 5
Once the oil is hot, pour in the well drained, parboiled chips and cook at 180-200ºC depending on the oven until crispy.
Step 6
For sweet potato, scrub them clean and slice into wedges. Preheat an oiled baking tray and once the oil is hot tip in the sweet potatoes, skin on is nicest, and sprinkle them with a mixture of curry powder, chilli powder, garlic powder, turmeric and paprika powder and a little salt to taste and bake until nicely browned and fragrant.
Step 7
Eat with a home-made coleslaw (Grate red and point cabbage, a small carrot and chop up a bit of red pepper or half a small apple and some red onion. Add low fat mayo -Sainsbury's is great- and a little mustard and pepper).
Step 8
Alternatively you can make a leafy green salad with cucumber, sliced red pepper or beetroot and an olive oil dressing with a drop of cider vinegar, mustard, salt and pepper.
