1onion

2 clow sodium chicken broth
1 x 14.5 ozdiced tomatoes

1 x 14 ozchickpeas
can, rinsed
½ cdried apricots
quartered
1boneless skinless chicken breast
trimmed, cut into bite size pieces

Instructions
Step 1
Heat oil in medium saucepan over medium heat until simmering.
Step 2
Add onion, garlic, garam masala, paprika, salt. Cook, stirring often, until onion is softened and spices are fragrant, about 5 minutes. Stir in flour and cook for 1 minute.
Step 3
Slowly whisk in broth, scraping up any browned bits and smoothing out any lumps. Stir in tomatoes, chickpeas, and apricots.
Step 4
Season chicken with salt and pepper, add to stew mixture, and bring to simmer. Reduce heat to medium-low, cover, and simmer until chicken registers 160, 10-15 minutes.
Step 5
Remove from heat and stir in parsley.
Step 6
Serve over rice.
