CRUSHED POTATO PIE

If you have a few potatoes, you have to try my super easy potato pie recipe! It’s the perfect idea for a quick dinner and it’s MAMMA MIA 🤤
You can of course take this recipe as inspiration and fill your pie with your favourite ingredients! Try to add some salami, Gruyère or pancetta for sine extra flavour 😍
Ps. Serve it a room temperature for the best result!

Step 1
Place your boiled potatoes on a 20cm pie tin and mash them with the help of the bottom of a glass or with a spoon. Make sure that the mashed potatoes cover perfectly the whole tin (both the edges and the base). Season with salt, pepper and a generous drizzle of olive oil and bake your potato base for 30 mins (180C/360F).
Step 2
In the meantime, in a bowl, whisk eggs with milk and cream cheese and season with salt and pepper. Set aside.
Step 3
Once your potato base is nice and crispy, carefully remove it from the oven and fill it with your mozzarella, cherry tomatoes, spinach and onion.
Step 4
Pour your cream cheese mixture in and bake for 30 more mins (180C/360F). Serve at room temperature and enjoy. Buon appetito!
