Peel and cube potatoes into small cubes then add oil to cover a large pan and add the potatoes in. Make sure they are not heaped on each other they need space to cook evenly . Drain some of the excess oil out of the pan then add back in the potatoes with the seasoned beaten eggs . Cook another few minutes stirring to break up the eggs . Serve with herbs of choice and enjoy
