Instructions
Step 1
Peel and cube potatoes into small cubes then add oil to cover a large pan and add the potatoes in. Make sure they are not heaped on each other they need space to cook evenly . Cook about 15 minutes stirring to make sure they are golden and evenly cooked then drain on paper towels and season with salt and pepper

Drain some of the excess oil out of the pan then add back in the potatoes with the seasoned beaten eggs . Cook another few minutes stirring to break up the eggs . Serve with herbs of choice and enjoy
