Preheat your oven to 190°C (fan) Scrunch up the lavash breads accordion-style. Trim the edges if needed to fit them into your baking dish.

Lightly oil the baking dish and transfer the lavash breads into it, arranging them loosely. Spray or brush the tops with olive oil.

4. Nestle the cherry tomato halves and salmon pieces between the folds of the lavash.
