Instructions
Step 1
Slice strawberries and set aside.
Step 2
Thinly slice and quarter cucumbers, then set aside.
Step 3
In a large bowl, combine the package of spinach arugula mix, fresh basil, and mint.
Step 4
In a small jar, combine ~2-3 Tbs olive oil, 1-2 tsp maple syrup, some kosher salt, and black pepper to make a dressing for the greens. *NOTE: If you plan to have this as leftovers, do not add the dressing to all of the greens. They will wilt easily, and need to stay dry until you are ready to eat!
Step 5
Once you are ready to serve the salad, crumble the goat cheese with your fingers and mix it into the greens, along with the strawberries, cucumber, and homemade dressing.
