Step 1
Cut chicken into cubes, place in a bowl and cover with buttermilk, salt, and white pepper. Stir then marinate in the fridge between 1 hour and 1 night. In a separate bowl, combine flour, baking powder, dried thyme, chili flakes, paprika, salt, pepper. And stir.
Coat the chicken in this breading and fry for a few minutes in “batches”. Combine Soy sauce, ginger, garlic, sesame oil, brown sugar, honey, and gochujang. Stir. Coat the fried chicken with this sauce. Top with sesame seeds and scallions. Ready to serve.
