Instructions
Step 1
Mix ground turkey with 1/4 cup feta, pepper, salt, and dill. Form goofball sized meatballs and place onto heated skillet over medium heat with olive oil and crushed garlic. Cook for 16 minutes.
Step 2
Chop tomatoes, 1/2 cucumber, purple onion, and mix into large mixing bowl with olive oil, pepper, salt, and dill. Heat pre-cooked rice in the microwave and add to the mixing bowl and stir. 5 minutes.
Step 3
Mix greek yogurt and 1/2 cucumber (grated) with the juice of one lemon, salt, pepper, and dill. Place one scoop of rice mixture in bowl, top with dollop of tzatziki, and four to five meatballs.
Step 4
Garnish with hummus if you have any in the fridge, or fresh dill and feta!
