CREAMY AROMATIC PORK SATAY VITH JASMINE RICE AND PEANUTS

Instructions

Step 1
STEAM IT: Boil a kettle. Combine rice, boiling water measure and a pinch of salt in a pot. Cover with lid and bring to the boil. Drop to lowest heat and cook for 12min. Turn heat off, leave lid on and steam for 5min.
Step 2
SLICE IT: Cut the broccoli into small florets. Cut the carrot in half lengthways

and thinly slice. Thinly slice the bok choy. Set all aside separately. Mince the garlic (if using). Combine all sauce ingredients in a bowl.
Step 4
FRY IT: Heat oil in a pot or frypan on high. Add the pork and cook for 6-8min, stirring to break up the pork, until almost cooked through,
Step 5
Add the sauce to the pan with pork and bring to a simmer on medium heat.
Step 6
Add broccoli and carrot and cook for about 4min, until vegetables are tender, and pork is cooked through.
Step 7
Add bok choy to pan and cook for lmin to heat through. Season to taste with salt.
Step 8
EAT IT: Top rice with pork, peanuts and chilli flakes (if using). Enjoy the satay goodness
