Instructions

Step 1
Place potatoes in a large saucepan and cover with about 1 inch of water
Step 2
Squeeze the juice of your lemon into the water and place the lemon halves in pot as well
Step 3
Add smashed garlic cloves to pot along with about 2 teaspoons of salt
Step 4
Bring to a boil and cook for 20 minutes
Step 5
While the potatoes are boiling, preheat the oven to 425
Step 6
Drain the potatoes and then set the pot of potatoes back on the stove with the lid off (this will allow the potatoes to “dry” out a bit)

Line a large sheet pan with parchment paper and drizzle with olive oil
Step 8
Add the potatoes to sheet pan and move around to coat in the olive oil
Step 9
Take a glass or measure cup and “smash” the potatoes to about 1/2 inch thickness and season generously with salt and pepper
Step 10
Bake the potatoes for 40 minutes or until desired crispy-ness is achieved
Step 11
While the potatoes are baking, make your lemony chive yogurt sauce by whisking together all of your ingredients in a small bowl until well combined
Step 12
Taste and season with more salt and pepper
Step 13
Serve your roasted smashed potatoes with your lemony chive yogurt sauce and enjoy!
