Instructions

Preparing Loin

Step 1
Butterfly slice the loin and season each side with salt, pepper, garlic powder, onion powder, cayenne powder, thyme, rosemary, sage, and paprika. Then lay out the bacon slices weaving them in and out of each other on top of a cooling rack on a baking sheet.

Filling

Step 2
De-stem spinach, mince garlic, dice onion, and dice and rinse mushrooms. Melt Butter in a frying pan and sautee garlic, onion, and basil until fragrant.

Step 3
Add in spinach and mushroom one handful at a time until all spinach is wilted and incorporated. Then season with garlic powder, onion powder, oregano, salt, pepper, and red pepper flakes.

Mix chopped cream cheese into mixture until it is melted and mixture is consistent

Assembling and Baking

Step 5
Layer filling onto rolled out loin, and roll it into a pinwheel. Place Loin in center of bacon weave.
Step 6
Wrap bacon around pork loin and secure ends with toothpicks. Season outside of bacon wrap with pepper, cayenne, onion powder, and garlic powder, brush with barbecue sauce.

Step 7
Bake at 375 degrees for 45 minutes or until bacon is hardened and loin is lightly pink in center, about 150 degrees internal temperature.
