Slow Cooker Roast Beef

My favorite way to cook roast beef. The meat comes out tender and juicy every time. It makes a great main course and the leftovers are versatile.

Instructions
Step 1
Season roast with salt and pepper on all sides
Step 2
Heat cast iron skillet on stove over medium high heat
Step 3
Add butter to heated skillet and melt.
Step 4
Sear roast on all sides until browned, then move to slow cooker.
Step 5
In cast iron skillet, sautée onions until soft, add garlic and cook for one minute. Once cooked, add to slow cooker on top of roast and pour any remaining butter on top.
Step 6
Sprinkle onion soup mix on top of roast. Pour beef broth around the roast, making sure it comes at least halfway up the sides of the roast.
Step 7
Place lid on slow cooker and cook on high for 4 hours or low for 6-7 hours.
Step 8
Remove roast from slow cooker and slice or shred. Serve with mashed potatoes, rice, egg noodles, or on hoagie buns. Leftover juices in the slow cooker can be used for gravy or dipping.
