or 1/2 English hothouse cucumber
kosher salt
1 poundgreen beans
trimmed
1 x 1.5 inchginger
piece, peeled, finely grated
1serrano chile
or Fresno, finely grated
1garlic clove
finely grated
0.3 cuprice vinegar
unseasoned
¼ cupwhite miso
¼ cupolive oil
½ teaspoontoasted sesame oil
Toasted sesame seeds
scallions
sliced, for serving
Instructions
Step 1
Lightly smash cucumbers, toss with salt and set aside
Step 2
Smash green beans
Step 3
Whisk ginger, chile, garlic, vinegar, miso, olive oil and sesame oil until smooth. Add to green beans and toss to coat
Step 4
Drain cucumbers, mix with green beans
Step 5
Plate, top with sesame seeds and scallions
