Step 1
1. Preheat the oven to 220°C / Fan 200°C / Gas 8 and line a large baking tray with baking parchment 2. Mix the paprika with % tablespoon of the olive oil and use to coat the pork loin. Season well with salt and freshly ground black pepper. 3. Place the courgette, peppers and aubergine on one side of the prepared tray. Drizzle with 1 tablespoon of the oil and season. to 4. Place a frying pan over a very high heat with the remaining oil. When the oil is smoking, sear the pork on all sides for 2-3 minutes, until it is nicely browned Transfer to the tray with the vegetables and roast in the oven for 30 minutes. Remove the pork and set aside to rest for about 5 minutes before slicing 5. Meanwhile, mix the balsamic vinegar, sun-dried tomato pesto and mustard together in a bowl. Serve the pork and roasted vegetables with the balsamic and sun-dried tomato sauce drizzled on top.
