Step 1
Heat oven to 350
Step 2
Bring a pot of water to a boil, add all seasonings, add chicken and cook until chicken is fully cooked
Step 3
Shred chicken, add some of the poblano sauce and 1/2 cup of cheese and mix
Step 4
In baking dish add thin layer of poblano sauce, then stuff tortillas with chicken mixture forming enchiladas. Top with remaining sauce and cheese
Step 5
Cover with foil and bake for 30 minutes covered, remove foil and finish baking for 10-15 minutes until cheese is melted and lightly golden
