Instructions
Step 1
Preheat Oven: Preheat your oven to 350°F (175°C).
Step 2
Mix Filling: In a large bowl, combine shredded chicken, sour cream, cream of chicken soup, garlic powder, onion powder, cumin, and a pinch of salt and pepper. Stir until well mixed.
Step 3
Assemble Enchiladas: Lay out each tortilla, fill with the chicken mixture, and roll them up tightly. Place seam-side down in a greased baking dish.
Step 4
Prepare Sauce: In a separate bowl, mix together green salsa and a handful of the shredded cheese. Pour this mixture evenly over the rolled enchiladas.
Step 5
Add Cheese: Sprinkle the remaining cheese on top of the enchiladas.
Step 6
Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until cheese is bubbly and slightly golden.
Step 7
Serve: Garnish with chopped cilantro, if desired, and serve hot with your favorite sides.
