Cook chicken and onion together, add olives
can olives sliced1

Melt butter to make roux with flour. Stir and cook until bubbly, whisk in chicken broth and bring to boiling

Remove from heat, stir in sour cream, chilis, and cumin
Step 4
Lightly grease 9x13 pan
Step 5
Add 2/3 roux mixture to meat mixture
Step 6
Put meat mixture in tortilla, cover with cheese, roll and place in pan. Repeat
Step 7
Cover enchiladas with 1/3 roux mixture
Step 8
Bake at 400°F first 20 minutes
