Instructions

Step 1
In a saucepan, combine vinegar, water, sugar, salt, red pepper flakes, black pepper, and garlic powder (if using). Bring to a boil, stirring to dissolve sugar and salt.

2. Reduce heat and simmer for 5 minutes.

3. Pack the sliced onions into a clean glass jar or container with a tight-fitting lid.

4. Pour the hot pickling liquid over the onions, leaving about 1/2 inch headspace.

5. Seal the jar and let it cool to room temperature.
Step 6
Store in the refrigerator. The onions will be ready to eat in a few hours and will keep for several weeks in the fridge.
