Yoghurt Base
Poached Eggs
Spiced butter
1 tablespoonoil
3 tablespoonsbutter
1 teaspoonpaprika
1 teaspoonaleppo pepper
½ teaspoonred chilli flakes

Instructions
Prepare yoghurt base
Step 1
In a bowl, combine the Greek yoghurt with minced garlic (if using) and a pinch of salt. Mix well and set aside.
Spiced butter
Step 2
In a small saucepan, melt the butter over medium heat.
Step 3
Once melted, add the paprika and red pepper flakes, and cook for a minute until the butter is fragrant and takes on a rich red color. Be careful not to burn the butter.
Poach the eggs
Step 4
Fill a large saucepan with water and bring it to a gentle simmer.
Step 5
Add the vinegar to the simmering water.
Step 6
Crack each egg into a small bowl or cup. Create a gentle whirlpool in the simmering water with a spoon and carefully slide each egg into the water one at a time.
Step 7
Poach the eggs for about 2 and half to 3 minutes, until the whites are set but the yolks are still runny.
Step 8
Using a slotted spoon, carefully remove the poached eggs and drain them on a paper towel.
Assemble the Çılbır
Step 9
Spread the garlic yogurt on a serving plate.
Step 10
Place the poached eggs on top of the yoghurt.
Step 11
Drizzle with the spiced butter.
Step 12
Garnish with chopped fresh parsley and dill.
Step 13
Serve the çılbır with crusty bread or pita on the side.
