Instructions

Activate yeast in warmed milk and sugar until it starts to bubble

Mix together dry ingredients, then add the lemon rind, nuts, and dried fruit

Add the cubed butter to the warmed milk and add with the beaten egg and the yeast mixture

Beat until thickened, then leave to rise for an hour.

Add half the dough to a lined loaf tin, place a 'sausage' of marzipan along the middle, then add the rest of the dough. Smooth the top using a bit of oil. Cover and leave to rise (mine took about 2 hours).

Heat oven to 230°C, add some water to a tray at the bottom of the oven to create steam, then bake 15 minutes. Turn down to 200°C and bake for another 50 minutes.

When completely cool spread with Icing and decorate.
