Instructions
Step 1
Heat olive oil in a large pot. When hot, add cherry tomatoes and cover with a lid. Cook for 10 minutes, or until they burst and soften.
Step 2
Add the garlic and tomato paste and fry them for 2 minutes, or until the tomato paste has carmelized. Add the orzo and Italian seasoning and toast everything for 1-2 minutes. Add the vegetable broth, cover with a lid and bring to a gentle simmer over medium heat.
Step 3
Season with salt and black pepper and simmer for 15-20 minutes, stirring often to prevent burning.
Step 4
When the orzo has absorbed all of the liquid, remove from the heat and stir the chickpeas and spinach. Stir and let the spinach wilt from the heat.
