Instructions

Step 1
In a large deep pan heat up a small layer of olive oil on medium high heat and brown the ground meat.
Step 2
Peel sweet potatoes and cut into one inch round, and insert into a medium size saucepan.
Step 3
Fill enough water to cover the sweet potatoes over half an inch from the top of the potatoes, and cover work lid. Cook potatoes for 30 to 35 minutes.
Step 4
When potatoes are done, remove them from the water and insert the pieces into large pan with ground meat, and mince them all together (keep sweet potato water in it's own sauce pan)
Step 5
Measure out 3 - 3.5 cups of the sweet potato water in the saucepan, and stir in the better than bouillon until it disolves.
Step 6
Pour in frozen veggies into the sweet potato water and bring to a boil for 5 minutes.
Step 7
Add dry quinoa to the sweet potato water, stir, and boil for 2 minutes.
Step 8
Cover the quinoa and bring heat down to low for a very slow simmer for 30 minutes, or until all water has evaporated from the bottom of the pan.
Step 9
Uncover the lid from the quinoa and fluff it up with a fork.
Step 10
Transfer quinoa to large pan with ground meat and mix all together
