Apricot Quark Cake
Delicious summery Apricot cake with a vanilla quark filling. Quark is a form of Central European soft cheese which is especially popular in Germany and Austria. For this recipe you can try to use light unsalted fresh cream cheese.

Instructions
Step 1
For the short pastry, first mix flour with baking powder and salt in a bowl. Add butter cut into pieces, sugar and egg. Knead dough with a dough hook to a firm shortcrust dough. Let the dough rest in the refrigerator for one hour.
Step 2
Roll out the dough and place it in a cake pan lined with baking paper.
Step 3
Preheat the oven to 170°C.
Step 4
For the filling, separate two eggs and beat their whites until stiff. Mix the yolks and the two remaining eggs together with quark, sugar, sour cream and custard powder. Then carefully fold in the beaten egg whites.
Step 5
Pour the filling into the cake pan and spread the chopped apricots on top. Bake in the often for about 50 min.
Step 6
Let cool and sprinkle with powdered sugar before serving.
