Instructions
Step 1
Season the prawns with salt, pepper and smoked paprika
Step 2
In a pan, on a medium high heat, add your oil and sear the prawns until almost cooked (around 2-3 mins) and set aside
Step 3
In the same pan, add in some butter then the shallots. After a minute add in minced garlic and saute for 1-2 minutes. Then add in the asparagus to cook slightly before the next step.
Step 4
Stir in the orzo and let it toast for around 2 minutes, stir occasionally
Step 5
Gradually add in the stock to the pan, stirring often until the orzo is cooked. Add more stock if needed, wait until the texture is creamy (10-15 minutes)
Step 6
Add in the peas followed by the lemon juice and zest, the cream and the parmesan cheese
Step 7
Top with more parmesan, chilli flakes or any garnish of choice. Serve as desired.
