Step 1
Heat oven to 375
Step 2
Cook pasta according to package. Add most of the broccoli to water 2 mins before pasta is done.
Step 3
Blitz remaining broccoli in food processor until crumbly. Transfer to small bowl and add breadcrumbs, 1 tbsp oil, pinch of salt.
Step 4
Rinse the food processor and add cottage cheese, milk, cornstarch, cheddar, 1/2 cup parmesan, mustard, garlic powder, salt, pepper and paprika. Blend until smooth.
Step 5
Heat 1 tbsp oil in empty pasta pot over medium low heat. Add the sauce and cook until gently bubbling and beginning to thicken, 4-5 mins (don't increase heat). Remove from heat, wait for the bubbling to stop, and then stir in the pasta and broccoli. Taste and add salt as needed.
Step 6
Transfer to a 2-qt baking dish, top with remaining parmesan followed by breadcrumbs and bake for 20-25 mins.
