Ingredients

white vinegar
1 ½ Tbspbutter
divided
½ cupbaby spinach
2cloves garlic
minced
salt
to taste
pepper
2 slicesham
or bacon
hollandaise sauce

Instructions
Step 1
Crack eggs into a bowl. Bring a pot half-filled with water to simmer over medium-low heat. Add a few drops of vinegar to the water, and using a fork or whisk, stir the water in a clockwise direction. Slide the eggs from the bowl into the pot and cook for 2 minutes, stirring gently without touching the eggs. Remove from heat and leave eggs in the pot for about 10 minutes.
Step 2
While the eggs are cooking through, slice bread in half and toast
Step 3
Melt 1 tbsp of butter in a skillet over medium-high heat. Add spinach and garlic, season with salt and pepper, and cook until spinach has wilted.
Step 4
Butter one side of each slice of toast and top with cooked spinach and a slice of ham or bacon.
Step 5
Place a poached egg on each half and drizzle with Hollandaise Sauce. Garnish with herbs, if using. Serve immediately.

In a microwaveable mug, whisk egg, almond flour, baking powder, salt, and flaxseeds. Microwave on high for 90 seconds.
