Erina Nakiri's take on Eggs Benedict in Season 1 of the anime Shokugeki no Soma (Food Wars). A classic Eggs Benedict recipe with only one twist: the addition of karasumi, dried mullet roe.

Step 1
Line bacon on a rack and place on baking sheet. Bake for 15 minutes at 400 degrees Fahrenheit. After bacon is done cooking, pat dry to remove excess fat

Place egg yolks in bowl with lemon juice. Whisk until fully combined. Bring bowl over a pot of simmering water (double boiler method) and continuously whisk until volume has increased ~1-2 minutes

Slowly add melted butter into bowl and continuously whisk. Continue until all butter is used and sauce is thick. ~5-7 minutes

Season with salt and cayenne pepper

Crack egg into a bowl or ramekin

Bring a pot of water to a simmer. Create a vortex by swirling spoon in water. Carefully place egg in. If doing more than one egg in one pot, carefully create a vortex after each egg

After all eggs are in water, turn off the heat, cover, and let it cook for 1-2 minutes. Depending how thoroughly you'd like your yolk cooked

Toast English muffin in preferred method

To assemble: begin with english muffin, a dash of karasumi powder, place a bacon strip on top, then one poached egg, and finally drizzle hollandaise sauce over
