Instructions

Step 1
Place a large sauté pan over medium. Add olive oil, onion, and pepper. Cook, stirring frequently, until onions are translucent (about 5 minutes).
Step 2
Add paprika, chili powder, cumin, salt and pepper, and stir to combine. Cook until fragrant, about 1-2 minutes.
Step 3
Add the tomatoes and their juice, and cook until the tomatoes begin to break down, about 5-7 minutes.
Step 4
Create 4 wells in the veggies, and break the eggs into them. Cook until desired consistency, then serve.
