I love shakshuka but find that I don’t make it too often, because it makes the most sense to make it for 4-6 people at a time. So here’s a single serving version that is just as easy and delicious!

Step 1
In a small skillet over medium high heat, add olive oil, garlic, onion, and bell peppers. Sauté for around 5 minutes until the onion is translucent. Stir in tomato paste, paprika, cumin, cayenne pepper. Cook for an additional minute while stirring constantly.
Step 2
Lower the heat to medium. Add diced tomatoes, water, mint and parsley. Cook down for around 10 minutes, stirring occasionally. Season to taste with salt and pepper.
Step 3
Make a divot in the center and crack an egg. You can do 1-2 eggs, depending on your preference
Step 4
Cover and let cook for 3-8 more minutes, depending on how runny you like your eggs
Step 5
Garnish with parsley and mint on top, and serve with pita or bread
