Instructions
Step 1
Heat your pan over medium heat, while you start dicing your veggies
Step 2
Add onion, bell peppers, and garlic to the pan and sauté for 3-5 minutes, stirring often.
Step 3
Add the tomato paste, and spices. Mix together. Salt and pepper to taste
Step 4
Add diced tomatoes, cover, and let it cook for another 5 minutes.
Step 5
Optional: Take the lid off and use a masher to turn the veggies more into a sauce
Step 6
Crack an egg or two (depending on what 1 serving means to you) into the pan and cover. Let it cook for another 3-5 minutes depending on how well done you like your eggs
Step 7
Serve with feta and parsley and pita or bread!
