Instructions
Caramelize Onions
Step 1
In medium hot pan, add tbsp of chicken fat. Once melted add minced onions and pinch of salt (salt will help draw out the moisture in onions). Continuously stir onions for 10-15 minutes until caramelized brown
Cook Chicken Livers
Step 2
Add another tbsp of chicken fat to pan with caramelized onions. Turn stove on high and brown chicken livers. Turn stove heat to medium and cook livers through
Make Patè
Step 3
In food processor, add chicken livers and onions, hard boiled eggs, and salt and pepper to taste. Pulse food processor until mixture is to desired consistency
Step 4
Place in separate bowl and chill in refrigerator until ready to serve. Serve at room temperature
