1 Tbspolive oil

1onion
medium, diced

2cloves garlic
minced

1jalapeño peppers
seeded and diced

1 cuplong-grain brown rice

3 cupsvegetable broth

2 cupsblack beans
cooked or from a can

1 Tbspground cumin

½ tspcayenne pepper

1 tspsalt

½ tspblack pepper

1 x 15.5 ozcan diced tomatoes
do not drain

4bell peppers
tops cut off and seeded

1 Tbspcilantro
chopped

1 lbground turkey
Instructions
Step 1
Preheat oven to 400° F.
Step 2
Add rice to pot and continue to cook for 2 minutes.
Step 3
Add vegetable broth to pot and bring to a boil. Reduce to a simmer and cook for 20 minutes or until rice is done.
Step 4
Stir in beans and tomatoes.
Step 5
Combine with cooked ground turkey seasoned with cumin, onion powder, and chili powder
Step 6
Place bell peppers in an oven-safe dish. Divide the rice and beans mixture among the 4 peppers and replace pepper tops. Cover dish with tin foil and heat in the oven for 40 minutes or until peppers are soft.
Step 7
Top with cilantro and your favorite toppings and serve
