Instructions

Step 1
Boil water and place lentils. Let it simmer in low- heat for 20 minutes.
Step 2
Heat olive oil in a skillet and add bell peppers and zucchini. Cook until softened.

Mix egg, salt, and black pepper in a bowl.

Place egg mixture and lentils in the skillet on top of zucchini and bell peppers. Mix until eggs are cooked.
Step 5
Place filling in the tortilla and top it with shredded cheddar cheese and fold it into a burrito.
