Step 1
Heat the oil in a saucepan and fry the garlic to a pale gold. Add the anchovies and cook for a few minutes, breaking them down with a spatula.
Step 2
Add the tomatoes, chilli lakes, olives and capers and simmer gently (uncovered) for 15 minutes.
Step 3
Towards the end of cooking, taste and season if it needs it (it doesn't always).
Step 4
While the sauce is simmering, cook the spaghetiuntil al dente. Drain, then stir in the sauce. Top with parsley and sprinkle with non-optional Parmesan.
